<image:caption>Miss Annie M. Elevier, Madoc scored 97.5 per cent for her cheese at the World's Colombian Commission in 1893 in Chicago.. She was appointed cheese maker at Spring Creek Cheese Factory and Creamery, Madoc in 1891 when she was only 22. It is not clear where she learned to make cheese. She might have apprenticed with Mrs. Jack Robertson of Brook Valley Cheese Factory in Madoc. She taught her husband John R. West and her sons, Elliot, John and William, how to make cheese and butter. For many years her husband was cheese maker at Harold. Her son William moved to Stirling in 1926 and ran the Stirling Creamery which is still in operation. This certificate hung at the Stirling Creamery for many years.</image:caption>

Bottle 2 only glass stamp label. Bottles 1-4 are Hansen's Danish Cheese Colour. Bottle 5 is an alkali bought from Smith's Hardware of Belleville. The cheese colour was used to change the milk from white to orange before it is made into cheese.
